A graduate “With High Honors” of the prestigious Culinary Institute of America in Hyde Park, NY, Jim Garrison brings over 30 years of Hotel/Restaurant experience to his role as Executive Chef and Food and Beverage Director at the Kirkley Hotel.
Jim has worked throughout the United States including Executive Chef positions in New York, Washington DC, San Francisco, and Miami. He was also the sole proprietor of the Regional favorite Big City American Bistro in Fort Walton Beach, FL.
Jim’s culinary style is unique and eclectic. He has a passion for fresh locally-grown vegetables, meats and poultry. His menus are filled with flavor and promise culinary integrity.
No stranger to the lime light or critical acclaim, Jim has cooked at the James Beard House three times, been a part of the Great Chefs of New York Series, and performed on the Food Network. As Chef de Cuisine of New York’s Les Halles Restaurant (made famous by predecessor No Reservations host Anthony Bourdain) his efforts helped earn that restaurant a 2 star rating and a “Bistro of my Dreams” mention from critic Gail Greene.
Under his guidance, the San Francisco boutique hotel, Hotel Savoy, won numerous accolades including a 3 star review; for his work, Jim was voted one of “North Americas Top Chefs”.
In 1994 Jim was recruited Washington DC to open the second Les Halles. With Jim as Executive Chef Les Halles was named one the Washington Post’s Favorite 50 Restaurants and the Washingtonian’s Best 100 Restaurants lists.
Jim became the Executive Chef/Food & Beverage Director at the 4 Star 4 Diamond Morrison House Hotel of Alexandria Virginia. The hotel earned spots on the Washington Post’s Favorite 50 Restaurants, the Washingtonian’s Best 100 Restaurants list, Washingtonian’s top 10 Hotels for a Wedding and an “Award of Excellence” from Wine Spectator Magazine. Morrison House went on to become one the top 30 hotels in the United States on Conde Naste Traveller’s Readers’ Poll.
Jim’s years in the Sunshine State also brought critical acclaim. In Miami, his Café Erté earned 3 stars and an “Excellent” review from South Florida Gourmet Magazine. His own 13 year venture, Big City American Bistro, received a 4 star review as well as a “Restaurant of the Year Award” from the [Name of local newspaper].
Jim’s mentors include: Chefs Gray Kunz; Jean Micheal Diot; Donia Bijan. He has also worked with 2 and 3 Star Michelin Guide Chefs Didier Oudill and Micheal Guerard in the South of France. It is from this list of culinary veterans that Jim developed his passion for cooking with simple quality ingredients, and has come to understand the true mindset of a great chef.
